Life is filled with so many things to celebrate. Most people celebrate holidays, birthdays, and weddings, but the Picky Peaches are about celebrating so much more. If you think about it, you may realize you have many reasons to celebrate. Maybe your child worked very hard and made a good grade, maybe your friend received good medical test results, maybe you achieved a goal, or maybe your spouse got a promotion–all of these are reasons to celebrate. Show the people you love how important they are by making them feel special. It can be as simple or as elaborate as you want. We’re celebrating the launch of this blog and we’d like to share our recipe we used to toast the occasion. It’s very simple and so yummy. Cheers!
The Picky Peaches Bellini
1 cup frozen sliced peaches
1/2 cup frozen chopped mango
1 bottle prosecco or inexpensive dry champagne (for a non-alcoholic version, use sparkling water instead)
Honey (squeeze bottle works best)
Let fruit thaw for about 30 minutes then process in a blender or food processor until puréed.
Place 2T. puréed fruit in each champagne flute using a spoon. Fill glasses the rest of the way with prosecco or champagne. Once the bubble have settled, stir gently until well-blended. Sweeten to taste by Adding honey one drop at a time. Caution: DO NOT put prosecco or champagne in the blender or food processor. Note: Fruit can be puréed a day ahead and refrigerated in a sealed container.
No celebration would be complete without at least a bite of something to eat. We suggest this savory appetizer. No, it doesn’t contain mayonnaise.
Mama’s Pimento Cheese Spread
2 cups finely shredded sharp cheddar cheese, softened
4 oz. whipped cream cheese
1 T. chopped pimento
1/4 tsp. onion powder
1 T. Worcestershire sauce
1tsp. Tabasco sauce
Dash of Cayenne pepper
1 tsp. Fresh lemon juice
In medium mixing bowl, combine all ingredients by stirring with a spoon. It will surely give your arm a workout!
Refrigerate mixture overnight in an airtight container.
Serve with raw vegetables or crispy, buttered baguette.*
*To make crispy, buttered baguette: Cut baguette into thin slices, about 1/4″ thick. In a large skillet, melt enough butter to generously cover the bottom of the pan. Place baguette slices in pan on medium heat. Do not leave unattended. They brown very quickly. When they begin to turn golden, turn them over to make the other side crispy. You’ll need to add more butter to the pan when you turn them over.
